(FSIS): A 10,000 employee agency within USDA responsible for ensuring food safety in some 6,400 meat and poultry plants throughout the United States; the agency also certifies the safety programs operated for state and foreign plants. Most food safety inspection costs are borne by taxpayers rather than the industry, in contrast to user fees for inspection and grading related to marketing standards.
